Not everyone would see a rich plot of farmland in a field of weeds. But that’s exactly how Josh Olsen re-imagined the three acres of “underappreciated” land that is now ACRES farm at Warren Tech. This forgotten field has now been cultivated and nurtured for half a decade in order to support the community around it, with food that is nutritious, organic, and truly local, fostered by educators who care deeply about enriching the earth, and creating the next generation of people who will do the same.
ACRES’ experienced faculty work with industry partners such as local restaurants, the Union Station Farmers Market, Freight Farms and local colleges to educate students from soil to plate. Come see—and taste—for yourself by joining us for our farm-to-table dinner on our farm or at one of the other participating Denver locations.
